Celiac Disease

Hey everyone!! We finally got some answers for my oldest daughter Cali. She has celiac disease (a gastrointestinal disease that causes a sensitivity to gluten that makes the small intestine become inflamed) and she also has many environmental and food allergies. It has become a major challenge in my life right now, because the combination of food allergies with celiac disease severely limits the foods my daughter can have. Normal bread, pastas, peanuts, eggs and milk are just some of the things she can no longer have if we want to relieve her symptoms. She has missed 5 days of school since it began a little over a month ago. I also feel terrible because whenever she told me her stomach hurt I assumed she was lying to get out of school. On a good note, I love shopping at Aldi and they have a small selection of gluten free foods that she will be trying and may be living on soon (macaroni and cheese, pancake mix, and gluten free bread) and I’m excited and hopeful that it will provide her some relief. She also loves milk and is allergic and lactose intolerant, so I bought lactaid and she doesn’t taste a difference, so that’s good also. She loooooves her milk!

I hope everyone is well and can’t wait to share the results of her new gluten free diet. If anyone has dealt with this before or currently deals with this diet, I will absolutely accept any tips or tricks! 🙂

    Good that you have answers for your daughters tummy problems. It may take little time to adjust, but I her dietary changes will become the new normal for her and you. There seems to be more and more gluten free, vegetarian and vegan options out there, so hopefully the adjustment will happen without to many dramas. My almost sister in law has Crohn’s disease (not the same 8 know,) she decided to go vegan almost as a last resort, and for the first time in 8 years, she could drive all the to work without having to stop to go to the toilet

    As for thinking she was making it up to get out of school, I think a lot of us parents would be guilty of that, I know I am. My daughter claimed to have a sore throat, like you, I thought she was just trying to get out of school- I was wrong, she had tonsillitis. I also remember my younger brother saying he didn’t feel well, my mum thought he was trying to get out of school, so she took him to the doctor on the way to school, turned out he had German measles, so it was back home to bed for him.

    Sounds like you are a great mum, you are doing awesome.
